Recipe of the month: Chicken fried rice
Rice is the symbol of Sri Lanka village diet and it is the staple food of Average Sri Lankan and it is usually served with many accompaniments called curries, Therefore whenever you hear the word rice the word is immediately followed by curry. This article is about a rice dish but it shows some foreign influence and it served as a mixture of rice, spices, chicken and vegetable.

Ingredients for 1 portion

• Adequate amount of oil
• 1 beaten egg
• 100 gram of diced (skinless) Chicken
• Chopped onion (1)
• 50 gram of peas
• Diced carrot (1)
• Sliced mushrooms
• 150 gram of boiled rice
• 30 gram of celery
• Soya sauce (2 teaspoons)
• 1 middle sized wok

Method

Heat the work and pore the oil and fry the egg. Later stir and fry chicken and onion separately by adding 2 table spoon of oil, cook the chicken until fully cooked then add peas, celery and continue with cooking for another 2 minutes while the wok is closed. Later (after 2 minutes) ad the rest of the vegetable and rice gradually and mix well.
